{"id":82799,"date":"2023-03-19T15:16:31","date_gmt":"2023-03-19T15:16:31","guid":{"rendered":"https:\/\/www.dimecuba.com\/revista\/?p=82799"},"modified":"2023-05-27T15:31:37","modified_gmt":"2023-05-27T15:31:37","slug":"arroz-amarillo-pollo","status":"publish","type":"post","link":"https:\/\/www.dimecuba.com\/revista\/comida-cubana\/arroz-amarillo-pollo\/","title":{"rendered":"Receta de Arroz amarillo con pollo: \u00bfqu\u00e9 lleva?"},"content":{"rendered":"<p>El arroz amarillo con pollo es un plato cl\u00e1sico de la cocina cubana que se caracteriza por su versatilidad y por tener innumerables recetas.<\/p>\n<h2>Historia del arroz amarillo con pollo<\/h2>\n<p>El nombre le viene por el color caracter\u00edstico de los granos de arroz al condimentarlos con el bijol, un condimento en polvo obtenido triturando los granos de la bija o achiote, un sustituto del azafr\u00e1n que por su alto precio es un desconocido en la isla desde hace d\u00e9cadas.<\/p>\n<p>La textura del plato final depender\u00e1 del tipo de grano que se use, desgranado, compacto, o con un punto asopado, o meloso.<\/p>\n<p>Sin embargo, hay algunos alimentos que no se recomienda a\u00f1adir, como papas, yuca, boniato, ni ning\u00fan tipo de tub\u00e9rculo, porque hacen que el plato quede demasiado pesado y no es una experiencia feliz a la hora de degustarlo.<\/p>\n<h2>Ingredientes<\/h2>\n<p>En la elaboraci\u00f3n de un arroz amarillo al estilo cubano, los ingredientes principales son los que hay.<\/p>\n<p>Se puede utilizar salchichas de pollo cortadas en rueditas, muslos de pollo, dados de carne de puerco (cerdo), ternera, jam\u00f3n, chorizo, pescado, mariscos o simplemente vegetales como las habichuelas (jud\u00edas verdes), cebolla y pimientos cortados en brunoise, guisantes, zanahoria, ma\u00edz, etc.<\/p>\n<p>El arroz amarillo es una receta de la cocina de aprovechamiento. Un cocinero avezado puede sacarle mucho provecho porque es r\u00e1pida de hacer, muy adaptable y con pocos ingredientes se le puede dar de comer a muchas personas.<\/p>\n<p>Para preparar un arroz amarillo al estilo cubano necesitar\u00e1s:<\/p>\n<ul>\n<li>2 cuartos de pollo (muslos y contramuslos)<\/li>\n<li>1 taza de arroz<\/li>\n<li>sal<\/li>\n<li>\u00bd pimiento verde<\/li>\n<li>4 dientes de ajo<\/li>\n<li>\u00bd cebolla<\/li>\n<li>2 tazas de caldo de pollo<\/li>\n<li>comino<\/li>\n<li>pimienta<\/li>\n<li>1 hojita de laurel<\/li>\n<li>\u00bc cucharadita de bijol.<\/li>\n<\/ul>\n<h2>Preparaci\u00f3n<\/h2>\n<p>Para empezar, corta el pollo en octavos y a\u00f1ade los condimentos que m\u00e1s te gusten.<\/p>\n<p>Res\u00e9rvalo en el refrigerador por media hora aproximadamente.<\/p>\n<p>Luego, en una olla de presi\u00f3n, pon un poco de grasa al fuego. A\u00f1ade las piezas de pollo y deja que se sofr\u00edan. Incorpora luego los ajos y por \u00faltimo la cebolla, el laurel y los pimientos.<\/p>\n<p>D\u00e9jalos cocinar durante 5 minutos y remueve a cada rato para que se dore bien.<\/p>\n<p>Lava y escurre el arroz. A\u00f1\u00e1delo a la olla mezclando con el resto de los ingredientes.<\/p>\n<p>C\u00fabrelo todo con el caldo, pon el bijol y tapa la olla.
